CONSUMING SUMMER PEPPERS

Just to break up the puppy pictures, I thought I'd post on food to keep up w/ Angela & her menus. I'm a little pepper heavy in the veggie drawer so I purposely cut up half a yellow onion, 2 bell peppers (red & yellow), 1.5 anaheim hot pepper (mild) and half a jalapeno. Oh and 3 garlic cloves.
Season w/ EVOO, salt, pepper, garlic powder. Stir, then put into hot fry pan. Let it get crunchy on the edges before turning. After the first turn or two, I add honey for carmelizing. Yum.
Put over rice and if you have it, I put a little hummus on the side. Absolutely delicious. My hots weren't too hot. I may have to do this again for lunch tomorrow.
Maybe I'll be brave enough to put in a serrano chili.
